Tomato Soup

It seems as though I have a bit of a tomato buying fetish.  My boyfriend asked why I had bought more tomatoes since the fridge was already full of them.  So I decided I needed to make something to use them up. 

On Friday I got braces on my teeth.  Now they are very sore as they are starting to move for the first time.  As a result to add to my already complex diet I can now only eat soft foods! 

So I thought the best way to use up the tomatoes and satisfy my soft food requirement would be to make some tomato soup.

2 Carrots, peeled and roughly chopped
2 Sticks of celery, sliced
2 medium onions, peeled and roughly chopped
2 cloves of garlic, crushed
Olive oil
1 Chicken and 1 vegetable stock in 1.8 litres of boiling water
12 ripe tomatoes, chopped (I used a mix of plum and regular tomatoes and roughly blended them in food processor)
6 ripe tomatoes, left whole
bunch of basil (about 20 leaves)
sea salt and freshly ground pepper

Put the olive oil in a large pot, add the carrots, celery, onion and garlic.  Cover and cook for around 10 minutes until the carrots begin to soften.  Add the stock and all the tomatoes and bring to the boil.  Reduce the heat and simmer for a further 10 minutes.  Then add the basil and season with salt and pepper.  Remove from the heat and put it in a food processor and blend.

Feeling lighter!

When I first started on the anti candida diet I was 10 stone and 8 pounds, a bit to heavy for my 5ft 2in!  I was going to the gym 4 to 5 nights a week and following a gym program for over a year.  My instructor could not believe I had not changed weight in all this time as she could see my fitness progress as it was all computerised.  I was very disheartening. 

I ended up leaving the gym at the same time as I started on the anti candida diet.  I instantly began to loose inches but no weight.  I even dropped a dress size and remained the same weight.  I thought this must have just been the bloatedness disappearing.  As I had looked about 3 months pregnant and now had a flat stomach.  Then last week I was in hospital and they weighted me. I was under 60kg!  I wasn't sure what this was in stones but I knew it was not 10st 8 either.  When I got home I weighted myself again and true to form the spindle shot up to 10st 8! 

The next day it dawned on my that my scales was broken.  Although it was wishful thinking as I had been 10 st  8 on the gym scales too.  But it was enough for me to run into town and get another one.  But I'm so glad I did now as it has given me a massive boost to keep going on the anti candida diet, as am now weighting in at 9 st 1!!!  I nearly fell off the scales laughing.  Best candida news ever :D

Oh no im on an antibiotic!!

Yesterday I had to have my four wisdom teeth surgically removed.  To my horror at the end of it I was handed a prescription for an antibiotic.  I have to take augmentin for 5 days.  I did consider not taking it as it has been prescribed only to prevent an infection in the gums.  However my face is so sore already when the pain killers wear off that I'm not really willing to chance getting an infection too!

I'm going to double my dose of probiotics for 10 days and hope this helps combat the negative effects of the antibiotic.  If you have any other suggestions I would love to hear them.  How far back is this going to set me on my anti candida diet?

Chicken Stir Fry

Before I started on the anti candida diet I always passed on the veg.  As soon as I found out all the food I would have to exclude I new I would have to get over my veg issues especially since I could not have any fruit.  The thoughts of this was a nightmare until I made this chicken stir fry.  There is great flavours from cumin, ginger and tamari sauce and they hide the taste of the veg.  I now don't mind the veg on their own either.

More amazing for me though is the peppers.  I had a major pet hate for peppers.  I wouldn't even eat an apple that had been sitting beside a pepper as I could taste the pepper off the apple! People who know me are amazed to see peppers in my fridge or in my lunch at work! Of course I'm yet to eat an apple that has been sitting beside the pepper as I am still in phase one of the diet.

I think this stir fry is great for you want something quick or for lunches because you can just heat it up in work.   This recipe would also be lovely with beef or pork.  I don't use pork at the moment because if you have issues with diary you can often have an issue with beef too as it has the same fat content.

Ingredients are for 1 so just multiply as needed
Fillet of chicken cubed
1 small red onion roughly chopped
Ginger thinly sliced approx. 1.5cm
1 garlic clove crushed
3 spring onions chopped
2 florets of broccoli broke into small pieces
1/4 red pepper cut into strips (or any colour or mixed)
Handful of peas in pods
juice of half a lime
1 tsp of ground cumin
1 tspn of Tamari (wheat free soy sauce, i like Clearsprings as there is no alcohol in it)

Heat your oil on the pan, then add the chicken, onion, garlic and ginger.  Allow to fry until the chicken is white all around then add your remaining vegetables.  Fry for about 1 minute then add your lime juice and cumin. Fry for another minute then add the Tamari sauce. Continue to fry until the chicken is cooked throughout. So simple yet so tasty.  You can use whatever vegetable you like.

Mexican Fajitas Night

I mentioned before how I love fajitas, every now and then I get a massive craving for guacamole so I just have to a Mexican night.  That's what happened last night.  Normally I would use chicken but for a change I used a pork fillet. 

1 pork fillet
1/2 red pepper
1/2 green pepper
1 medium onion
fajitas seasoning (see my yeast and sugar free recipe here)
Tortilla wraps (see my dairy, wheat, yeast, sugar, corn and gluten free recipe here!)
Sunflower Oil

1 Avocado
Juice of half a lime
Small bunch of coriander leaves
small garlic clove crushed (optional)

2 large vine tomatoes, chopped
Small bunch of Chives, chopped
3 Spring Onions, chopped
Juice of half a lime

Add the oil to the pan, once hot add the onion, peppers and pork.  Allow the pork to slightly brown all round.  At this stage you can add the fajitas seasoning.  The fajitas seasoning is liquid and as the meat cooks it forms a paste around the meat and veg.  Once this has happened your meat should be ready.

For the guacamole roughly mash the avocado.  Add the garlic, lime juice and coriander leaves and mix together.  I do not add any garlic to my guacamole as I prefer it without.  If I'm not making salsa I add a chopped tomato to the guacamole.  You can also use a lemon instead of a lime but I think the taste is far superior with the lime.

For the salsa, mix all the ingredients together.

Then just roll it up and dive in!

My Current Program

I began the attogram program on the 7th of December and I have to say I really feel it helps.  Before I started to do the program I was randomly taking different anti fungals and was getting die-off symptoms and just generally feeling crap.  I decided to start the attogram program with whole approach so I would have some structure to my program.  I'm very happy so far and have even ordered my second months supply.

First thing in the morning I get 8oz of water and add 1 tbsp of Bentonite Magma and 1tbsp of Caproyl Medical food and 1 rounded tsp of Psyllium Powder (Husks and Seeds). I do not eat for an hour and a half after the drink.  I have the drink again in the evening 2 hours after my evening meal.

The attogram program also includes a probiotic but you cannot buy it if you are overseas or so I originally thought.  I have since found out that they will send it to you in the winter but not the hot summer months. I will be taking their probiotic next time but for now I'm continuing to take Udo's Super 8 until my next order.  I take one tablet with every meal.

I really expected this drink to be foul, but even though you couldn't describe it as delish its not that bad. It just taste really bland. 

What is the best thing you have used to get rid of candida and what caused the worst die off?


Feeling Sick

I was feeling really nauseous yesterday with major stomach pains and vomiting.  It all passed after about 6 hours. 

I've no idea if I caught a bug or if it was something I ate or maybe even die-off.  I had drank a small glass of my kefir water and ate some buckwheat pancakes with rashers and garlic butter.  I was pretty much feeling lousy immediately after eating.  I have had the pancakes before so maybe it was the kefir water or a bug.

I am now too afraid to drink the remaining batch of kefir water but have continued to make some more and will try it again to see if the same thing happens.  I really hope it was just a bug as I have read great stories about kefir and its health benefits.
